Irish Applesauce Raisin Bread                                 back to the previous page

Courtesy of Christine McInerney:  a old Irish recipe handed down for generations and shared by a love, Irish lady.  Thanks, Christine!

Mix all ingredients in a large bowl:

1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp cinnamon (or more, if you like cinnamon, and I do!)
1/2 tsp. nutmeg
1 cup Oats (dry)
1/2 cup brown sugar
2 eggs
1/3 cup oil
1 cup applesauce
1 cup raisins

Mix well with a big spoon.  Pour in a greased loaf pan. It will be full.  Bake at 350 degrees for 1 hour.  That's it.  It's simple and delicious!
